This delicious semi- soft blue from Auvergne originated in the middle of the 19th century and was granted AOC protection in 1975. Aged for a minimum of 60 days, it is moist and slightly sticky in texture, with mottled blue-green veins against an ivory-colored paste. It finishes with notes of spice, pepper and salt.
