This is one of our most delicious blues (or, maybe we should say, “blus”). It has a high fat content (as rich as Half-and-Half) and is chock full of blue veining. The makers call this cheese “punchy and profound, with a finish that won’t quit.” We concur. And, in case you were envisioning Buffalo Bill when you thought about this cheese, change your tune. The milk comes from water buffalos - not the ones on our nickels. Pair with pears for a little bit of heaven.
