This cheese is inspired by Wales -but further inspiration came from the name of the New Hampshire town that is home to the farm. The NY Daily News described this cheese best. "The cheese is based on an old Welsh recipe and has a distinct Cheddar vibe, with a satisfying tang and crumble. But, beyond that, there is a soul-filling mellowness, perhaps even a fleeting vision of the New England Holsteins taking in the crisp, sweet grass that would eventually become cheese." The only word they forgot to add is ‘delicious.’ Third prize winner in 2012 World Champion Cheese Contest put on by the Wisconsin Cheese Makers Association.
