Description

Red Leicester is a hard, cheddar-like cheese traditionally made from unpasteurized cow's milk.  Although it dates back to the 17th century, today only a few makers produce it using the old methods and ingredients. Our Red Leicester recreates the traditional moist, high-cream content, crumbly, mild, firm-bodied and flakey cheese of old.

Enjoy it young or enjoy it at its best, aged six to nine months, when it delivers an almost caramel flavor.  A full-bodied white wine will complement its robust flavor.
