This cheese is a certified organic unpasteurized cows' milk in the Tomme/Alpine style. It is made at the Von Trapp family farm and dairy
(yes, those von Trapps) in Waitsfield,
Vermont and named after Samuel Savage, the first owner of record to farm the farmstead. This is a hard cooked and pressed cheese, aged for 8-12 months. It satisfies with
an assertive, nutty and sweet taste.
