A spreadable cheese housed in a tough crust, Winnimere was developed to use the rich, high fat, high-protein winter’s milk from the Ayrshire cows in the barns at Vermont’s Jasper Hill Farm. The disk, with a rind washed in beer, is aged 60 days and wrapped with bark from local spruce trees. Sometimes smoky, sometimes fruity, sometime mustardy, this cheese varies depending on the winter. No matter what the flavors, it’s always delicious.
