Known as one of the most important cheeses of the Basque Country, this D.O.P. controlled cheese is aged for up to 1 year. It is unpasteurized and acquires its lightly smoked flavor from being hardwood smoked with hawthorn and cherry wood. A hard rind cheese with a nutty, buttery interior and a pleasant aroma.
