Whoever came up with the combo of figs and cheese was a genius. The sweet, meatiness of the fruit is a perfect foil when paired with the sharp, saltiness of a good hard cheese. And, since fresh figs aren’t always an option, keeping these Pajarero Figs from Valencia on hand is the next best thing. They have thinner skins than domestic figs and are great in salads or as a base for warm foie gras. Of course, they can be a terrific snack, too.
