The race to add new grains to your table is on! And farro should top the list. A distant cousin of barley, farro looks like giant puffed rice when cooked. It is nutty in flavor and has a slightly crunchy texture. Full of fiber and protein. Throw a handful into soup or sauté and add to a salad of tomatoes, lemon, red peppers and zucchini, or serve with marinara sauce and top with freshly grated parmesan. Farro is a great change from more traditional grains.
