Principato di Lucedio Risotto comes to us in three varieties--Arborio (short grain) Carnaroli (medium grain) and Black Rice (Riso Nero Venere.)  They are all grown on a canal-laced estate where excellent rice has flourished since the 12th century and where they can continue to grow, harvest, and pack their product, traditionally to make sure that each grain is handled with care.
